Recipe of the Week – White Bean Hummus

White Bean Hummus: serves 6-9 people

Ingredients:
16 oz Cooked White Beans – canned work great but if you like to cook beans make fresh
3-4 Cloves Fresh Garlic – if you want to ward off the Vampires add more
2-3 Roasted Red Peppers – same rule apply as for beans, canned works also
1/4 cup White Balsamic Vinegar – any sweet vinegar will do
1/4 cup Extra Virgin Olive Oil
Salt and Pepper
Paprika and chopped chive for garnish

Procedure:
This is the hard part – Once you get all of your ingredients together, get your food processor out. Put the garlic in first. Chop the garlic for a few minutes, and then add everything else into the food processor, except the olive oil. Now that everything is in the machine, turn it on, run it for a minute. Add the olive oil slowly as the mixture is blended. Blend until your desired smoothness is achieved (some prefer it chunky, some like it silky).

Place in fridge covered for about an hour or so to chill, and then when you serve garnish with chives and Paprika – if you have Pimenton (smoked paprika) from Spain that is yummy too. Drizzle your favorite Extra Virgin Olive Oil on the top.


Enjoy with your favorite chips, bread, veggie or with a spoon.
